Spinach Walnut Pesto

Not your traditional basil pesto, but this twist has just as many applications as the original. Use this traditionally as a pasta sauce, or with chicken, sandwiches, and wherever else your imagination may lead you! All of this can be prepared no fuss in a high power blender or food processor (minus the walnuts), so it makes for a very easy clean up.

Spinach Walnut Pesto – serves 2-4 (from Family Fresh Cooking)

1 cup packed spinach leaves; 1/3 cup toasted walnuts; 1/4 cup olive oil; 1/4 cup grated Parmesan cheese; 1 clove fresh garlic; splash of lemon juice; salt and pepper to taste

To toast the walnuts, preheat oven to 350°F. Spread walnuts out in a single layer and toast for about 10 minutes, or until golden and fragrant. Image

Next, add all of the ingredients into the food processor and blend on high. Image

Serve up!
